We bought a building for our coffee shop in the late 2009. We had a business plan in place and were working with architects and builders to put the plan in motion. In June 2010, just before turned 1, Lilly Kate, the youngest of four, had a severe reaction to soy and was diagonsed with life-threatening food allergies. We were suddenly Epi-Pen carrying parents of a child the size of a 3 month old. It seemed she was allegic to everything…including artificial colorings. To keep her safe, we cleaned out our kitcen and started over. We soon found that parties and restaurants were out of the question and were at a crossroad. We chose the path less traveled, and that has made all the difference. We altered our business plan and our building design to include what we now call the LKOK Kitchen – where everything is made without gluten and the top 8 food allergens…in other words the are Lilly Kate Approved.
